Sussex Squire Wines is a fourth-generation family farming operation perched at 470 metres on Spring Gully Road, Gillentown, in the Clare Valley — one of the region's highest and most exposed vineyard sites. The estate farms organically and sustainably, producing extremely limited quantities of single-vineyard, dry-grown wines: just 60 to 150 dozen bottles of each variety per vintage. Reds — including their flagship Thomas Block Shiraz (from the highest block at 480m), Cabernet Sauvignon, Sangiovese, Malbec, Mataro and Grenache — are aged in old and new French oak and bottled unfined and unfiltered, alongside whites Riesling and Fiano, and a rosé. The cellar door is open daily 11am–4pm with 30–40 minute guided tastings ($10 per person, waived with purchase); no certification body is named on the website.
