Founded in 2006 by childhood friends Behn Payten and Troy Jones, Payten & Jones is one of Yarra Valley's most distinctive minimal-intervention wineries, set in the heart of Healesville town. The estate's own dry-grown vineyard is biologically farmed — hand-picked fruit is fermented with natural yeasts with little to no fining or filtration, allowing each wine to express genuine character. The range spans Pinot Noir, Chardonnay, Sangiovese, Syrah, Verdelho and Grenache. The cellar door — a winery shed with murals from a Melbourne artist and a courtyard — is a community hub: food trucks roll in on weekends and the vibe is decidedly relaxed and unpretentious.
