Jasper Hill Vineyard is a certified organic family estate in Heathcote, central Victoria, founded in 1978 by Ron and Elva Laughton and now managed by their daughter Emily and her husband Nick. Vines were first planted in 1975 on ancient Cambrian-era basalt soils at 300 metres elevation, and all fruit is dry-grown without irrigation — a rare commitment in the Australian heat. Specialities include Shiraz, Nebbiolo, Riesling and Fiano, all hand-pruned and fermented with natural yeasts without added nutrients or enzymes. The cellar door operates seasonally and is open by appointment; call +61 3 5433 2528 to arrange a visit.
